Panless Meat Loaf

Ingredients
  • 2 Eggs
  • 3/4 cup Milk
  • 2/3 cup finely crushed Saltines
  • 1/2 cup chopped Onion
  • 1 tsp Salt
  • 1/2 tsp rubbed Sage
  • Dash Pepper
  • 1½ pounds lean Ground Beef
  • 4-8 slices Bacon
Sauce Ingredients
  • 1 cup Ketchup
  • 1/2 cup Brown Sugar (Packed)
  • 1 tsp Worcestershire Sauce
Directions

Preparation:
In a large bowl, beat eggs. Add milk, saltines, onion, salt, sage and pepper; mix well with beef. Shape into 4 individual loaves. Wrap each loaf with 1-2 slices of bacon: under, around and on top. Combine sauce ingredients and spread 3/4 cup over loaves.

Cooking:
Place loaves directly onto grate. Set GRILL at 320°F and PROBE at 150°F.

Serving:
Let stand 10 minutes before slicing. Serve with remaining sauce.

Quick Tips
  • Cut into patties and serve on bun to make Super Burgers.
  • Also good with a slight smoke flavor (3-5 chips of mesquite); just don't overdo the smoking.
