IngredientsSmoke on high for 40 to 50 minutes, then turn down the cooking temperature to 200 degrees and the keep warm temperature to 160 degrees. The Prime rib will over shoot your target temperature while cooking over night so that is why I set the probe temp to 120. I wanted 140 degrees finish temp. Plug the air hole in the back of your lid to help lock in the moisture of your meat. Set the automatic shut off time on your grill to 18 hours. Let the meat cook and be ready for a delicious treat tomorrow.
